Cowboy Brain Bars

Cowboy Brain Bars

Ingredients

  • 1/2 to 1 cup of butter or ghee

  • 3/4 monk fruit

  • 1/4 tsp sea salt

  • 2 tbs molasses

  • 4 eggs

  • 2 cups almond butter or peanut butter (use blood type butters)

  • 1/2 c gr flax seeds

  • 1/2 chopped nuts walnuts, pecans pumpkin seed etc

  • 1 cup coconut flakes

  • 1/2 c cacao powder/nibs or chaga (energizing superfood options)

  • 1 tbsp vanilla or almond extract

  • 1 1/2 to 2 cups pureed' pumpkin or squash

  • 1 cup flour (sorghum & buckwheat flour mixed gluten free or a gluten free flour mix (use blood type to select flours)

  • 1 tsp baking soda and 1/2 tsp baking powder

  • 1 1/2 rolled oats (gluten free)

  • 3/4 cup optional stir ins (currant, dried cranberries, mulberries etc)

Directions

Place the first 4 ingredients into a large bowl and cream together. Add the egg and mix well. Stir in the nut butter, flax seeds, nuts and coconut (if using). Add cacao (if using), and stir in slowly. Mix in vanilla and pumpkin. Mix together the flour, baking powder, and baking soda, and stir slowly into the batter. Stir in the rolled oats.


Pre-heat oven to 325. Spread the mixture out on a well greased 11x14 baking pan and bake for 30-35 minutes. Done when the top springs back after being lightly pressed with a finger (check near the center of the pan)
