Lemon Squares



Ingredients

  • ¼ c ground walnuts (soaked & dried if possible)

  • ¼ c ground hazelnut meal or almond meal

  • ¼ c ground golden flax seeds

  • ½ c arrowroot flour

  • ¼ c monk fruit

  • ½ c melted butter (from grass fed cows) or ghee - cooled

  • take out other monk fruit

  • ½ tsp baking powder

  • 2 eggs…beaten

  • 3 tbsp lemon juice

  • 4 tsp lemon peel

  • pinch of sea salt


Let’s Get Started

Preheat oven to 350….mix together flour, walnuts, ground flax seeds, monk fruit…then add butter or ghee and mix well…press dough firmly down in an 8 x 8 buttered pan…bake until lightly colored about 15-20 min...let cool till crust is no longer warm


While the crust is cooling…mix monk fruit, baking powder, eggs, lemon juice, lemon peel and salt…mix well for a bit…then pour over cooled nut crust not hot and return to the oven for about 18-20 min or until lemon topping is a lovely gold and pretty firm.

Cut into squares when cool….enjoy!
